I visited a Chipotle restaurant a few days ago because I heard just how good and natural the ingredients were. I was impressed with both the food and atmosphere. I left with my own ideas of course as to making an even cleaner version of a Chipotle menu item.
The menu item I decided to experiment with was the Chipotle Burrito Bowl. This version contains a choice of cilantro-lime rice, pinto or vegetarian black beans, meat (braised carnitas or barbacoa, adobo-marinated and grilled chicken or steak) or guacamole, salsa and cheese or sour cream. Not too bad I must say but I am going to change it up a bit and make it cleaner.
Ok the first ingredient I will replace is that white rice. I will replace it with black rice. Black rice is a wild rice that has a tasty texture. Unlike white rice it is a slow digesting low glycemic food which will keep you full longer. This in turn will prevent blood sugar spikes and help maintain the waist line. Brown rice would also be a good option.
I then topped it off with vegetarian black beans like the Chipotle version. This is still a good addition since black beans are loaded with fiber and protein.
Even more protein when I added my own lean, grilled chicken breast strips. Not sure if Chipotle’s version contains lean chicken breast but mine definitely does.
Then add lots of colorful vitamin and antioxidant loaded chopped spinach and tomatoes, plain Greek yogurt and sweet corn salsa.
Lining the bowl with gluten-free, low glycemic sweet potato tortilla chips was delicious. These chips were so good my daughter ate a handful. There was also no question whether the tortilla chips were G-free as I have to in most restaurants. This would make the meal delicious for those living gluten-free lifestyles.
Voila!!!! Don’t get me wrong. I love Chipotle. I just love trying to create at home.

- Black Rice
- Vegetarian Black Beans
- Grilled Chicken Breast Strips
- Fresh Spinach
- Fresh Tomatoes
- Plain Greek Yogurt
- Peppery Sweet Corn Salsa
- Sweet Potato Tortilla Chips (Gluten Free version)
- Place half cup cooked rice in bottom of bowl
- Add 1/4 – 1/2 cup cooked black beans over rice
- Add grilled chicken strips over beans
- Add chopped spinach over chicken
- Add diced tomatoes over spinach
- Add 2 tbsp salsa over spinach and tomatoes
- Add 2 tbsp sour creme over salsa
- Line bowl with tortill chips
