Garlic Ginger Chicken Stir Fry


I am no stranger to the idea of eating to fuel your workout. My 90 day mixed martial arts conditioning is the highest performance workout I have ever done. Without following my eating plan, I found it not only difficult to make through the workout but also the day. Here is a quick and easy delicious entree loaded with fresh foods that I tried.

Cooked skinless, chicken breast, cut into strips

Snow Peas

Broccoli Florets


Red Bell Peppers

Sliced Onions

Sliced Mushrooms

Garlic Ginger Chicken Stir Fry

  • 1/2 cup tbsp canola oil
  • 1 clove garlic, minced
  • Pinch of ground ginger
  • 4 oz pound boneless , skinless chicken breasts, cut into slices
  • 1/4 onion diced
  • 1/4 cup sliced carrots
  • 1/4 red bell pepper, seeded and sliced into thin strips
  • 1/2 cup snow peas
  • 1/2 cup broccoli florets
  • 1/2 cup mushrooms, sliced
  • 1/8 cup reduced-sodium soy sauce or Braggs Aminos
  • 1 tsp cornstarch
  • 1/2 cup reduced sodium chicken broth
  1. Heat oil in a wok or large skillet over medium-high heat. Add garlic and ginger and cook 1 minute. Add chicken and cook 3-4 minutes until starting to brown, stirring constantly. Add onions, carrots and peppers and cook 1 minute. Add snap peas, cornstarch, broth and broccoli and cook 2 minutes. Add soy sauce or liquid aminos and cook 2 minutes, until vegetables are crisp-tender.
